Me thinks it's because of how he wants to be, in sort of a real relationship. He sees how Wang and her boyfriend are in love, and wants to have that love. He wants something that isn't superficial, but means something. I think, maybe, he realizes that is love that Wang and her boyfriend have is unattainable to him and that just makes her love her so much more. A little hard to explain for me partly because I watched it many many months ago.
And Chow is indeed far from superficial, in fact, his life is drowned in beauty and art, and he sees a reflection of that in Wang, she's the form of delicate beauty that he's been looking for. He doesn't want someone who's just tits, in short. And quite frankly, the idea that you can love anyone you screw and spend time with is not true. Love occurs actually more with people you know you can't have.
